Having been sick for waaaay too long now, its about time I started getting healthy!! I normally eat pretty well, I very rarely eat greasy fast foods, and I looove my fruit and veges, so I don’t mean changing my lifestyle or anything. But I need to do something to help kick all the disgusting germs I have. Stuffy head, fever, blocked nose, cough, you name it, I’ve had it this last week. Any ideas or secret medicinal recipes you got for me?
Lying on the couch for the last 4days suddenly got extremley boring today, and whilst I was out already for an appointment this morning, I decided to go and stock up on lots of fresh fruit and vege.
While in the waiting room for my appointment, I came across a super easy recipe for zucchini and corn fritters with lemon prawns. As much as I would have loved to add the prawns to my lunch, my stomach is still very much on the fragile side and I dont think it could have handled them just yet. Soon tho hopefully!
So here was the recipe I adapted from the Australian Womans Weekly magazine
1 medium size zucchini, grated
1 corn cob, kernals removed,
- 1 potato, grated
- 1 egg
- 1/2 teaspoon of bicarbonate of soda
- 1/3 cup of flour
- 1/2 teaspoon baking powder
- Cayenne pepper
- Chives or spring onion
After you have grated the zucchini and potato, seperately or together if you like, place the gratings in a paper towel or clean tea-towel, and squeeze out all the excess juice. Now chuck it all into a bowl, mix it up and get a frying pan on a medium-high heat.
Place not-heaped tablespoons of the mix into the frying pan and press down gently. Let it brown for about 3-4mins, then flip and let it brown. Keep them warm in the oven on a plate while you cook the rest.
Unfortunately I didnt have any tomatoe chutney or relish to go with these, only tomatoe sauce, but they were still veeery enjoyable, and healthy (I think!?)
Give them a go, they would be especially delicious with some bacon and hollandaise for a bit of an indulgent weekend brunch – Yum!!
